$21 Food Weekly Challenge - Day 4
April 28th 2010 23:52
Half way through the challenge and today it was ham sandwiches all round for lunch using up the last of the ham leftover from the shop.
We had no fruit in the fruit bowl so younger son got some sultanas for his lunchbox. I was actually surprised he asked for them!!
Dinner was a dish hubby had cooked a couple of weeks ago (on another post in this blog) Chicken poached in coconut cream served with rice.
We had a tin of coconut cream left over (not the exact amount for the recipe but enough) and some chicken nibbles in the freezer (not fillets as recipe required but there you go). The two things we were missing were soy sauce and limes.
So I did a bit of shopping today getting the two missing ingredients and some fruit to replenish our sad fruit bowl. I even managed to get some toothpaste all for $6.80.
So far we've spent $10.30 with three more days to go.
The dish was served up with packet noodles as there really wasn't enough rice to do the dish justice and the last of our green vegetables (broccoli and a choko).
Gotta say it was delicious and the kids loved it too...which means it was definitely a winner!!

Thanks for the encouragement. Yep, that dish is delish, I had it for lunch leftovers today.
Glad you're enjoying the challenge. We've certainly enjoyed doing it.
Take care,
Sam
