Bacon and Capsicum Flan

My nine year old son had me in tears tonight when he made a concerted effort to eat the capsicum from this dish, especially when it is not his favourite food.
Despite the reservations my two sons had to this meal, it was delicious and filling and perfect for a cold winter's night.
If you have left over vegetables they can be added to the dish. I put in broccoli and cabbage as well.
I served these up with hot chips. The kids definitely ate those.
Ingredients
1T oil
1 large brown onion, finely chopped.
4 bacon rashers, rind removed, chopped.
170g roasted capsicum, drained on paper towels (I roasted a red capsicum on the grill then chopped it)
300ml cream
6 eggs
1/4 C SR Flour
1C grated tasty cheese
1/4 C chopped basil
Method
1. Preheat oven to 180deg C. Lightly grease a 24cm ovenproof pie dish. Place on a baking tray.
2. Heat oil in a large frying pan over moderately high heat. Add onion and bacon; cook and stir for 3 minutes or until onion softens.
3. Whisk eggs,flour, half the cheese and basil in a large bowl. Stir in capsicum mixutre. Pour intoo prepared dish. Sprinkle remaining cheese over top of egg mixture.
4.Bake for 35-40 mins or until just set at centre. Remove from oven. Stand in dish for 5 mintues. Cut into wedges and serve.
