Big Fat Chocolate Cake

Being the mother of two little boys and a husband of no fancy packaging, sometimes I just need to make the simple recipes for peace in our house.
I love experimenting with different dishes, fancy and plain, but if I really want the harshest of critics in our house, to love my cooking, it's the basics that win every time.
Forget Matt Preston and his fancy cravat, my nerves are on edge when an eight year old and five year old stick their forks into their meal.
As it dribbles down their chin and they chew (sometimes with their mouths open) noisily, I wait for the verdict.
Sometimes I win and other times I end up in the bottom one.
The chocolate cake recipe was a winner before it hit the oven. They licked both beaters and bowl clean then waited with absolutely no patience for dessert.
It probably didn't help that I set it up for the photo above and then left it on the bench while dinner was cooking.
Ingredients
185g butter
2tsp vanilla essence
1 3/4 c caster sugar
3 eggs
2 c SR flour
2/3 c cocoa powder
1 c water
Icing
90g dark chocolate chopped coarsely
30g butter
1 c icing sugar
2Tbs hot water, approximately.
Method
1.Grease base and side of deep 23cm round cake pan, line base with baking paper.
2. Combine butter, essence, sugar, eggs, flour, cocoa and the water in large bowl; beat on low speed using electric mixer until ingredients are combined. Increase speed to medium, beat about 3 minutes or until mixture is smooth and changed in colour. Spread into prepared pan.
3. Bake in moderate oven 1.5 hours. Stand 5 minutes, then turn onto wire rack to cool. Spread with chocolate icing.
Chocolate Icing
Melt chocolate and butter in medium bowl over hotwater; gradually stir in sifted icing sugar, then stir in enough of the water to mix to a spreadable consistency.
