Catering to the Masses

One byproduct of providing sandwiches as a business, is that quite often we get asked to do platters for various different groups and many varied reasons.
We have had many community groups put their orders in for lunches, including at Christmas time but one of the most interesting was our very first catering order.
The local theatre group, Village Players, was putting on a production of 'Summer of the Seventeenth Doll' and they needed a plate of sandwiches for each performance as a prop. Also, they wanted a plate of sandwiches for the actors at the end of each night. We were a little nervous but considering the props were only cucumber on bread, it was an easy start for us.
Since then we have done more complex platters, including wraps, and more simple fillings depending on the tastes of the customer. We decorate the platters with fresh food such as grated carrot, alfalfa sprouts, tomato wedges even olives. It seems a shame sometimes to send them off with the customer when they look so good.
