Greek Spinach and Cheese Pie

Wanting a vegetarian alternative for dinner?
I remember when I got this recipe. I was sitting in a doctor's surgery waiting for my 12 week pregnancy scan when Geoff Jantz came on the small tv in the waiting room.
My diet was pretty limited due to morning sickness (which happens all day, just quietly) but this dish sounded yummy.
I rummaged around in my bag for paper and pen and quickly wrote down the ingredients then watched him create the dish and took down the instructions.
When I got home I tried it out and although it's probably not recommended for weight loss candidates it was so yummy that it has become a 'family dish' now that my son, who I was pregnant with at the time, is 8 years old.
Ingredients
Olive oil
1 onion, chopped
3 cloves garlic
4 large handfuls spinach, blanched.
1 lemon
salt and pepper
haloumi cheese, grated
feta cheese
6 eggs (yep six!)
oregano
3/4 C cream
Method
1. Cook olive oil and onion in a fry pan and add garlic.
2. Squeeze water out of spinach and chop coarsely.
3. Add spinach to the onion.
4. Add lemon juice and salt and pepper.
5. Put in pie dish
6. Spread cheese on top.
7. Mix eggs and cream and add oregano then pour into pie dish.
8. Put in the oven at 190 deg celsius (fan forced) for 35-40 minutes or until set.
