Kafta Rolls filled with spinach and pine nuts

I actually managed to feed the kids up so much that they didn't want dessert. Pretty damned impressed with myself!!
The dish was the koftas that I made with a kilo of mince. While I would put a bit more seasoning than I had in next time...it was a yummy dish and easy to make.
It has a delicious combination of flavours without being spicy for kids. I made double the batch and froze half. I also used all the vege off-cuts to make vegetable stock by boiling them and adding a bay leaf and seasoning. With that I steamed the veges that accompanied the koftas.
Do I feel green or what AND I got to eat a yummy dinner.
Ingredients
1kg lean mince
1C finely chopped parsley
1 onion finely chopped
1.5 t salt
1/2 t ground allspice
1/2 t black pepper
olive oil for brushing
steamed vetables to serve
Filling
250g spinach, washed, drained and coarsely chopped.
8 spring onions, finely chppped (1.5 C)
1.5 T olive oil
1/2 C pine nuts
1/4 t ground allspice
1/4 t black pepper
1/2 t salt
1T lemon juice
Method
1. Combine all the filling ingredients in a large mixing bowl and set aside.
2. Place the mince, parsley, onion and spices in a blender and process to combine (in batches).
3. Dampen a chopping board with a little cold water to prevent the mince from sticking. Take a quarter of the mince mixture and flatten it out on the board to resemble a medium-sized pizza base.
4. Place a quarter of the filling in a line down the centre, then fold the sides over to form a roll. Repeat with the remaining kafta mixture and filling to make four rolls.
5. Preheat oven to 220 deg C and pour the oil into a roasting pan. Add the kofta rolls and turn to coat in the oil, then bake for 30-40 mins without turning.
6. Cut into slices and serve with steamed vegetables.
