Our Famous Baxter Burger

When we first bought the rundown ice cream shop that was to become The Sandwich Shak, the previous owners had made bacon and egg rolls. While they made them ahead of time and kept them in a bain marie, we decided to keep them on our menu but freshly made.
Many of the young school kids from the town would order them, so they were definitely a winner. One young guy would come in and ask if he could have cheese melted over his egg, then tomato and lettuce put on the roll with the egg, bacon and barbeque sauce. We were happy to accomodate.
Suddenly we noticed other young people coming in and saying "I'll have that burger that Baxter gets" or " I'll have Baxter's burger". It became so popular that we decided to put it on the menu.
Baxter was so proud. He came in with his camera and took a photo of the menu and recommended the burger to all his friends.
One guy I served one day, asked why the Baxter burger and I explained the story to him. He pulled out his driver's licence and showed that his name was Peter Baxter. Guess what he had for lunch....a salad sandwich (no, I'm kidding!!)
Now it is a definite fixture in the town and most people in Evans Head know what's in a Baxter Burger...and thanks to this blog, so do all those who read it!!!
