Pork Cassoulet

I always get excited when I find a good sausage recipe. They are cheap and easy to tempt the kids with.
Grilling or frying them can often get boring so finding this pork cassoulet caught my interest straight away. AND it was delicious.
If pork isn't your thing, then easy, turn it into a beef cassoulet or lamb cassoulet. It's that flexible.
Ingredients
1.5 T oil
8 thin pork sausages
1 onion, finely chopped
2 carrots, finely chopped
2 bacon rashers, rind removed, chopped.
400g can diced tomatoes
5 sprigs fresh thyme
420g can cannellini beans, rinsed
1C soft fresh breadcrumbs
Method
1. Heat 3 tsp oil in a large frying pan over a moderate heat. Add sausages, cook and turn for 3 mins or until lightly browned. Transfer to a heatproof plate. Add onion, carrot and bacon to pan, cook and stir for 3 mins or until soft. Cut sausages into thirds diagonally.
2. Add sausage, tomato, thyme and 1/2 C boiling water to onion mixture. Bring to the boil. Reduce heat; simmer, covered for 10-12 mins or until suasage is cooked. Stir in beans, cook covered for 3 mins or until heated.
3.Meanwhile, heat remaining oil in a small frying pan or saucepan over moderate heat. Add breadcurmbs, cook and stir for 4 mins or until crisp and light golden. Remove from heat and sprinkle over cassoulet. Serve.
