Pork Sang Choy Bow

I found this dish a great way to help kids eat salad items such as lettuce. My kids have no trouble with eating veges but salads are a different story.
After this dish, however, it was quite fun...and not a little messy.
Ingredients
1 large iceberg lettuce
3 green onions (shallots) finely sliced
300g pork mince
1 T hoisin sauce, plus extra to serve (optional)
1/2 T soy sauce
1 carrot, diced
1 celery stalk diced
Method
1. Select best lettuce leaves and make four large cups. Place in a large bowl filled with iced water to crisp.
2. Spray a wok with cooking oil, and heat on high. Stir-fry green onion for 1-2 minutes. Add mince and cook for 5 minutes, until cooked through. Add hoisin sauce, soy sauce, carrot and celery and stir-fry for another 2-3 minutes. Transfer to a bowl.
3. Arrange lettuce cups on a platter and spoon pork mixture into each. Drizzle with extra hoisin sauce, if using and serve.
