Rice Salad with Dressing

Well, my husband's t-shirt had four large numbers on it which helped me pick my next recipe.
The big irony in all that is it landed on rice salad with dressing and has ingredients in it like capsicum, sultanas and corn...all of which he hates.
So I decided to make this salad for a girls getaway. This particular group of girlfriends are all from my church and boy, do they know how to cook. I've always said that ladies from the CWA and church groups are hard to beat in the cooking stakes.
So no pressure, but I think it looks pretty good and the dressing isn't half bad so hopefully it will pass this weekend.
It's simply a cup of cooked rice mixed in a bowl with four shallots chopped finely, 1 medium red capsicum chopped finely (I used green, for no other reason than it was there), a drained can of corn kernels and 1/3 of a cup of sultanas.
You can also add a 450g tin of pineapple pieces but even I draw the line at that.
Mix the ingredients all together then add the dressing just before serving.
To make the dressing put 1/3 cup vegetable oil, 2 tablespoons white vinegar or lemon juice, 1/4 teaspoon mustard powder and 1/4 teaspoon sugar in a glass jar and shake.
