Spicy Pumpkin Cake

I love any recipe that has the word 'spicy' in it and for those who read my other blog 'Vintage Foodie', you will know we have an abundance of pumpkin at the moment.
So what could be better than a recipe for Spicy Pumpkin Cake?
It turned out lovely and moist and has already been half devoured. So much for morning tea during the week.
Here is the yummy recipe.
Ingredients
125g butter
1 C brown sugar lightly packed
grated rind one lemon
2 eggs, lightly beaten.
2 C SR flour
250g peeled, cooked and mashed pumpkin.
pinch salt
1 tsp mixed spice
250g sultanas
Method
1. Cream butter, sugar and lemon rind. Add eggs gradually. Beat well.
2. Add mashed pumpkins, flour, salt and mixed spice. Beat well and mix in sultanas.
3. Pour mixture into greased paper lined deep 20cm cake tin.
4. Bake in the oven on 150 deg celsius (300 deg F) for 55-66 minutes. Cool in tin.
