Spinach Frittata

I can't take any credit for this dish as my hubbie made it the other night. He certainly did something right as our younger son (5 year old) ate the whole thing and he doesn't even like eggs.
It may have been the fact that my husband kept telling him it was a cheese pie.
It was delicious, not too salty, plenty of egg and cheese flavour but not overpowered by the mushrooms.
A definite winner.
Ingredients
2T olive oil
2 cloves garlic, crushed
1 bunch spinach, chopped
6 eggs
1/4C cream
chopped mushrooms
freshly ground black pepper
3/4C grated Havarti cheese
Method
1. Heat oil in frying pan, add garlic, spinach and mushrooms, stir over heat until spinach releases water and evaporated. Cool.
2. Lightly beat eggs, add cream, pepper and cheese. Stir in spinach and mushrooms.
3. Pour into a greased 23cm flan dish. Bake in moderate (180 or 350) oven for 20 minutes or until set.
Serves 4.

LOVE fritatas! I do different ones; with zucchini, potatoes or silver beet -- works very well too. I'll have to try with spinach next
