Summer means Salads

In our beautiful land downunder it is now hitting the summer season which means a slowing up in the sale of bacon and egg rolls, hot doughnuts and sometimes even the coffee.
What does start taking off are our salads along with the milkshakes, smoothies and iced coffees. It was hard to know what salads we'd sell when we first opened as, for them to be as fresh as possible they would need to be made every day.
My aunt had supplied us with mega amounts (or so it seemed) of cabbage from her farm, so coleslaw was on the menu for a week or so, but we decided we would do a generic salad that contained all our salad items including gourmet items, with our without meat.
And they just walk out the door at this time of year, especially when people are starting to worry about how they will look on the beach!!!
I must admit when I'm wanting to feel healthy for morning tea or lunch, then I head for the salad bar and don't feel guilty about munching away either. The secret is often to pour some of the oil from the sun-dried tomatoes, char-grilled capsicum or egglant over the salad as a dressing.
Salads and summer just go together so naturally.
