What makes a real salad sandwich?

Only the other a day a friend was asking if customers come in and ask for a salad sandwich and then proceed to take nearly all the ingredients out of it, so it ends up just a tomato and cheese filling.
Then funnily enough, only the next day a young man came in and asked for a salad sandwich and then asked that there be no sprouts, no beetroot, no tomato and no cucumber. That left carrot, onion, lettuce and cheese.
Some customers consider pineapple part of a salad and others won't go near it. On our menu board our salad sandwich is generic with all the items listed as mentioned above, but often if the person looks like they may be a bit fussy we suggest they let us know if there's anything they don't like.
One man, who ended up not being a customer, has claimed the prize for the fussiest of salad sandwich customers. He told our employee up front that he was vegetarian and wanted to know why we had the lettuce sitting in the salad bar pot next to the chicken. If I had heard him I would have asked for his suggestions as to where to put it! I certainly had one idea!
Then he didn't like the knife that I used to cut his bread as it had crumbs on it and he wasn't confident that I hadn't used it to cut meat. I advised him then, that he will have to wait until I do the next order as we were waiting for more of the bread that he ordered to be defrosted.
I was offended that he felt the shop wasn't clean. We had been checked by council and sailed through with flying colours. We are an award winning shop that had obviously reached the correct standards and we work very hard to ensure that our little shop is always clean and we have done the correct courses on safety and food handling so that we do everything correctly.
He eventually got a refund and left the shop. I think some people should simply just eat at home.
